is it somehow possible to have a page field that contains as list all the fields

I think your best option would be to modify this module:

https://github.com/Hani79/Processwire_FieldType_Templates

It is for selecting templates but could be easily converted to work for fields - let us know if you need any help converting, or if you do it, please share it here!
