Blank slate?

Sorry if this is a daft question. Installed but how do I get to a blank slate, there are all these pages and templates and it seems really difficult to get rid of them?

Currently only way is to remove stuff (through API or manually through admin). Pages first, then templates and finally fields. After that cleaning you could create blank site profile (and maybe share with others?) with Profile Exporter: http://processwire.com/talk/index.php/topic,583.0.html

After that you can use your blank state profile to create new projects.
