Can anyone recommend how to do version control on a mac for a single user? What apps are you using to do this? Links to a beginner's guide?

Use Time Machine?
Yeah, I know it's a backup solution. But it keeps dated versions, it's automated, and catches the things that I don't think to. It has actually saved me more than any other version control systems.
But for more formal version control, I think Git is the best way to go. Lots of guides out there on how to use it. I think it also comes on Macs already. I don't necessarily think it's easy to use, but it's not any more difficult than any of the others.

Also I know many solo developers like paid dropbox and it's unlimited versions.
